When your a/c is running full speed to keep the house cool, the last thing you want to do is add more heat via kitchen appliances. Try these no-cook meals instead.

Poke Bowls

Start with leftover rice or use chopped lettuce as a base. Top with sushi-grade tuna or salmon, edamame beans, shredded carrots, avocado chunks, sliced cucumbers (marinate them for a few minutes in rice vinegar for extra zing) and any other veggies you have. Sprinkle low-sodium soy sauce and sesame seeds on top—delicous!

Sandwiches

It’s perfectly ok to have sandwiches for dinner. Load up fancy French bread sandwich loaves with your protein of choice—tuna salad, roast beef, ham—and add all the fixings like cheese, pickled veggies or marmalade. Make it fun! Serve with cherries, grapes or baby carrots on the side.

Cold Soup

Search online for recipes for gazpacho or cucumber soup. These refreshing soups are typically made in the blender using fresh produce and then served cold. They’re absolutely delicious. Also consider chilled avocado soup with crab.

Salmon Ceviche

Mix high-quality salmon with red onion, cilantro, avocado and red peppers. Make a dressing of citrus juice, garlic and ginger. Stir it all together, and yum! Service with tortilla chips for a refreshing and filling summer dinner.

Salad

There are a million hearty salads that serve perfectly well as a dinner meal. Pick your favorite veggies, proteins and dressing and mix it all up. Grocery store rotisserie chickens come in handy here; buy one on Sunday and then you can use it all week in sandwiches and salads.

Buffalo Chicken Wrap

You can also use your rotisserie chicken in a wrap. Mix shredded chicken with hot sauce, garlic powder, cumin and paprika. Spread the mixture on a tortilla along with lettuce and any other veggies you like. Dollop with blue cheese dressing, and wrap the whole thing up into a handheld delight.
