Deliciously Ella Cooks Up Scrumptious Meals

British food blogger Ella Mills is here to encourage people to follow a plant-based diet, showing people it can be fun and delicious.

After being diagnosed with several medical conditions following four months in and out of hospitals, Mills jumped on the plant-based living wagon in an effort to maintain a healthy lifestyle. She started her blog, Deliciously Ella, in 2011 as a way to encourage herself to fall in love with plant-based eating. Within four years, she published the best-selling debut cookbook in the U.K.

One year into starting Deliciously Ella, Mills began hosting supper clubs and cooking classes. She funneled the money from these endeavors into building her first commercial venture: the Deliciously Ella app.

These garlic and lemon Hasselback potatoes look just as beautiful as they taste.

A meal of roasted sweet potatoes, broccolini, garlicky black beans, brown rice, tahini and sesame seeds sounds so good you won’t even miss meat.

Mills is a master at masking vegetables as potential meat dishes. Here she makes sticky peanut butter sweet potatoes topped with toasted sesame seeds on top of a creamy edamame artichoke spread with almond butter.

Mills understands a healthy lifestyle isn’t just made in the kitchen.

On those nights when cooking a meal sounds more like a chore than a fun task, Mills has this quick 10-minute veggie stir fry recipe for you.

Not everything revolves around health. It’s equally as important to indulge yourself every once and a while, so Mills concocted a six-ingredient recipe for these mini chocolate Easter eggs.

Mills acknowledges a fully vegan diet isn't for everyone, however, even opting to be a flexitarian can help your lifestyle and the planet. This delectable meal features roasted sweet potatoes and crispy chili chickpeas topped with a creamy tahini sauce, dollops of harissa and some fresh herbs.
